Vegetarian Food in Budapest


Me and my husband spent a weekend in Budapest. A great city for vegetarians, we found a lot of nice places that serves vegetarian food. This is riceballs with curry and cheese (I will try to make theese at home).  The place we ate at is called Castro Bistro. The adress is Radautca 35.

Frittata


Frittata is the best ever. I often end up with 1/2 tomato a bit of a cucumber, we are just two people in the apartment then ýou dont use the whole thing. Then the fritatta comes in handy. Just take whatever veggies you want, chopp them up and in to the oven they go:)

4 eggs
1 dl of milk
2 dl of parmesan cheese

Poor over the veggies you have in the form ( I usally use a pieform).
In to the oven on 175 C until firm.

You can eat it warm or cold. perfect for lunch to work or picnic.

Comfort Food


This dish is perfect in the fall or winter, you can make it veganfriendly by not adding anything tonthe mashed potatoes...

300 gram of minched quorn meat
3 cloves of garlic
I shredded carrot
1 yellow onion
1/2 red pepper
2 dl of red wine (or 3 dl why not?)
1 can of tomatoes
A bit of sugar.
Salt/pepper

Chop the onion, pepper and garlic in small pieces. Shredd the carrot. Then fry all this with oliveoil until soft. Then add the rest of the ingridiens. Now let it boil for a while, you maybe have to add more red wine under the way. Let it boil until it thickens up. Just salt and pepper as much as you prefer the same with the sugar. The sugar is just to get the sour taste of the tomatoes away. You can serve this with mashes potatoes or a pasta if you want. Voila!

Mashes Potatoes

Take as many potatoes you like, peel and boil. When they get soft mash them and then add milk, butter. Mash it fluffy dont use to much milk. Salt and pepper and add 1 dl of shredded parmesan cheese. Yum Yum!

Tomato Soup

 
4 tomatoes
1/2 yellow onion
3 dl of water
2 garlic cloves
Salt/pepper
2 tblsp (tsk) of sundried tomatoes
1/2 cube of veggiebroth
1 tblsp (tsk) of flour
 
 
 
 
 
 
This recipe is vegan friendly. You will get soup for two people. Start with boiling up some water and put the tomatoes in it. Boil until the skin cracks. Take them out and put them in cold water and then peel the skin off. Chop the onion and the garlic in fine pieces. Put it in a pan and fry it in olive oil. When the onion and garlic is golden put the flour in and add the water. Then in comes the tomatoes and the cube of veggiebroth and the sundried tomatoes. Salt and pepper as you like. Boil until the tomatoes separate. Then take the soup in a blender or mix it smooth with a handmixer. Taste and add more salt or pepper or if you want more sundried tomatoes just add. Serve with some garlic bread. Yum yum!

Carrot and Broccoli Burgers

                             




2 carrots
1 medium broccoli
1 half onion
2 eggs
1 teaspoon (krm) salt
1 teaspoon (krm) pepper
1/2 dl shredded cheese.

Peel the carrots. Cut into pieces.Then the broccoli, you can use the stalk and the head on the broccoli. Cut it into small pieces. Cut the onion in one half and peel it. Put it in a food processor with  rest of the ingredients. Mix the ingredients in a food processor until the mix is smooth. Form miniburgers and fry them in butter until they are golden brown.

Fry the burgers on pretty low heat. Veggies are easy and quick to burn on high heat. You want the burgers golden brown not black. If the burgers are falling apart don't throw away the mix. Just put them back in the food processor and add one more egg and then try again.
You will get 10-12 small burgers depending how big you make the burgers. Serve them with whatever you like...
